I made my first meal on the Daniel Fast, potato and green onion fritata.
The prep work was the longest part. The recipe called for 4 cloves of
garlic, minced. Dealing with garlic is so time consuming. That really
has to be a better way to mince garlic. It took about 10 minutes to
mince garlic clove #1. 1 down and 3 to go. I get going on clove #2 and I
have decided I am going to only use 2 cloves instead of 4. Chopping
onions I have down pact, so that was easy. The fun part was using 2 lb
of tofu. I've heard of tofu. I know it's a meat subsitute. I have never
eaten or used it in a recipe before. Opening the package was the
beginning of this adventure. Once I get the package open I put it in the
blender. Initially the blender acted as if it was not feeling the tofu.
I started mashing it up and the blender started working much better.
Tofu mixture is done. 45 minutes later, the meal is done and I try my
first serving. It wasn't half bad. Good taste and all I could taste was
the garlic.
This looks great, JO! I've had tofu in smoothies but never as an entrée. You've encouraged me to pull out the pots and pans for the next 20 days.

Pull them out. My kitchen has gotten a workout today between making just 2 meals.
